Abstract:
To provide a bakery product having excellent workability in the production, sufficient volume and excellent flavor and texture.
The oil-and-fat composition for the bakery product contains the following components (B), (C) and (D), based on component (A) of 100 pts.mass of edible oil and fat having a melting point of 20°C or lower: (B) 0.4-9 pts.mass of alginic acid propylene glycol ester; (C) 3.5-19.5 pts.mass of monoacylglycerol excluding organic acid monoacylglycerol; and (D) 1-8.5 pts.mass of organic acid monoacylglycerol.
