Abstract:

PROBLEM TO BE SOLVED: To provide an oil and fat composition for bakery products, comprising an additive making bakery products represent anti-aging and age-retarding effects, and improving meltability in the mouth of the bakery products.
SOLUTION: The oil and fat composition for bakery products is obtained by fixedly decentralising a moisture retention agent in edible oil and fat containing liquid oil as main material via an emulsifier.
