To provide an oil and fat composition for cooking, achieving the effects possessed by Bincho-tan (specific charcoal) without using a special device; and to provide a method for producing the composition.
The oil and fat composition containing carbon fine particles having high reducing power is obtained by using the new Bibcho-tan as a raw material, removing ash content attached to the surface of the Bincho-tan, gradually heating the treated Bincho-tan to 500±50°C, pulverizing the heat-treated Bincho-tan to coarse powder, forming fine-particle powder of the Bincho-tan from the coarse powder without adding thermal influence, mixing the fine particle powder with a small amount of oil and fat to disperse the powder in the oil and fat, removing precipitated coarse particles, mixing the dispersion with the oil and fat so that the dispersed proportion of the fine particle powder of the Bincho-tan may be prescribed concentration, and heating and cooling the resultant mixture.
