Abstract:

PURPOSE: To obtain an oil and fat composition for fry capable of producing a fry in which original flavor of the raw material itself is retained by using in frying the food and capable of being used for a long time almost without deteriorating.

CONSTITUTION: This oil and fat composition consists of 100 pts.wt. edible oil and fat, 0.005-0.5 pts.wt. extract of spice or/and hydrolyzate of the extract, 0.01-5 pts.wt. fatty acid monoglyceride, 0.01-5 pts.wt. fatty acid diglyceride and 0.005-2 pts.wt. organic acid monoglyceride and rosemary extract is used as the extract of spice.
