Abstract:
To provide an oil and fat composition for processed mince-like food which can give juiciness with an oil and fat feeling and a full body like sashimi, and a food containing the same.SOLUTION: An oil and fat composition for processed mince-like food contains protein and/or starch sodium octenyl succinate, and oil and fat, the oil and fat composition having a moisture content of 5% or less, and a content of the oil and fat being 50-90% in the composition. 50% or more of the composition is 1.0 mm or more in size.
