This oil and fat composition for a puff shell contains ≥0.2wt.% unsaturated fatty acid ester of diglycerol obtained by purifying and concentrating an ester prepared by carrying out the esterifying reaction of the diglycerol with an unsaturated fatty acid, transesterification of the diglycerol with a triglyceride, etc., and raising the monoester purity to ≥50% and/or ≥0.5wt.% sodium caseinate.
