Abstract:

PURPOSE: To provide the subject oil and fat exhibiting excellent bubbling property, over-run, shape-retainability, flower-forming property, normal temperature resistance, taste, flavor and meltability in the palate and consisting of an oil and fat having specific composition and physical properties.
CONSTITUTION: The objective oil and fat contains ≥25% SUS-type triglyceride (e.g. palm oil) and 5-60% laurin-based oil and fat (e.g. coconut oil) in an oil and fat and has an SFC of ≥50% at 5°C and ≥40% at 15°C. A low-oil cream having an oil content of ≤40% can be prepared from the oil and fat.
