Abstract:
To provide an oil-and-fat which improves an unpleasant smell generated on thermal cooking.
The oil-and-fat for thermally cooking, improving an unpleasant smell generated on the thermal cooking, is characterized by containing rice oil in an amount of 0.1 to 40 mass% and a trans-fatty acid in an amount of 0.5 to 12 mass% as a constituting fatty acid. Especially, the oil-and-fat for thermally cooking remarkably improves the unpleasant smell generated on the thermal cooking, when containing a palm-based fatty oil.
