Abstract:

PURPOSE: To obtain an acid resistant oil-in-water type emulsified oil and fat composition having excellent foaming and shape retaining properties not only in a neutral region but also in an acidic region where an acidic substance such as a fruit juice or a fermented milk added thereto.
CONSTITUTION: This oil-in-water type emulsified oil and fat composition contains 0.50-3.0wt.% fatty acid diesters of glycerol in an emulsified oil and fat composition prepared by mixing and emulsifying an oily phase with an aqueous phase. The content of saturated fatty acids in the fatty acids constituting the fatty acid diesters of the glycerol used accounts for ≥90wt.%.
