Abstract:
To provide a transparent oil-in-water type emulsion by the combination of materials acceptable as foods without a surfactant or an emulsifier.
Provided is the oil-in-water type emulsion characterized by comprising water, a fatty acid, an alcohol, and a basic amino acid and having a fatty acid/water mass composition ratio of 1, a fatty acid/alcohol mass composition ratio of 1, and system pH in a range of 6 to 8.
