Abstract:
PROBLEM TO BE SOLVED: To provide an oil-in-water type emulsion having good taste even when contained in food and beverage, while excellent in acid resistance, heat resistance and emulsion stability.SOLUTION: There is provided an oil-in-water emulsion containing a vegetable oil and fat, a protein decomposed article obtained by a trypsin treatment and an emulsifier, where the protein decomposed article has total sum of peak areas of a molecule with molecular weight of 1000 to 5000 Da to total sum of peak areas of all molecules derived from the protein decomposed article of 30 to 80%.SELECTED DRAWING: None
