Abstract:

To obtain an oil-in-water type emulsion composition composed of fat particles having a median particle diameter of not larger than a specified value, containing yolk, having improved stability in viscosity, simplified in workability in distribution and production of a product, excellent in taste, emulsion stability and preservability and useful for whipped cream, etc.

This composition is composed of fat particles of rapeseed oil, etc., having a median particle diameter of ≤1.00μm, preferably 0.60-0.80μm and containing yolk preferably in an amount of 3-20wt.% (based on the total composition). Further, the oil-in-water type emulsion composition is obtained by mixing and emulsifying at 40-65°C followed by homogenization.
