To provide a method for producing origosaccharide- or monosaccharide-enriched food or food raw material by which a low-molecular compound such as monosaccharide or origosaccharide as a functional food component is safely and easily produced from amino sugar residue-containing polysaccharide or its partially decomposed product without causing any difficulties.
A method for producing the origosaccharide- or monosaccharide-enriched food or food raw material comprises adding amino sugar residue-containing polysaccharide or its partially decomposed product as a substrate to at least one food raw material or food containing the food raw material which has enzyme having activity making the amino sugar residue-containing polysaccharide or its partially decomposed product have the low molecular weight so as to exchange it to origosaccharide or monosaccharide, and subjecting the substrate to molecule decreasing treatment using the enzyme.
