Abstract:

PROBLEM TO BE SOLVED: To provide a soft mold type packaged cut cheese for preventing cheese from melting and leaking out from a packaging material and preventing the cheese from being stuck to the packaging material at the time of heat sterilization and manufacture.
SOLUTION: The cut surface of soft mold type cheese is individually packaged by the packaging material provided with a specified synthetic resin layer so as to be tightly adhered to the layer and the heat sterilization is executed. As specified synthetic resin, drawn polypropylene, polyethylene terephthalate, polyethylene or the synthetic resin layer whose wetting index is less than 42 is used and the wrapping material constituted of the at least two layers of the synthetic resin and aluminum is preferable. The packaging is performed in the middle of a fermentation process and this cheese packaging body is manufactured. Thus, the growth of mold on the cut surface is prevented, the leakage of the cheese and the sticking of the cheese and the packaging material are prevented at the time of the heat sterilization and the preservability of the cheese is maintained.
