PURPOSE: To produce the titled bean curd resistant to degradation and capable of keeping the state of fresh bean curd without necessitating a cooling means, by putting a cotton-strained bean curd or a silk-strained bean curd together with ice in a pack, pouring sterilized water into the pack and sealing the opening of the pack.
CONSTITUTION: When a cotton-strained bean curd or a silk-strained bean curd produced by a conventional method is to be ;brought by a consumer, an ice cube is put into a pack at the store, the bean curd is placed on the ice cube, sterilized water is poured into the pack and the opening of the pack is sealed. The bean curd is quenched or maintained to a cold state with ice and the temperature of the bean curd can be maintained at ≤5°C until the bean curd is carried home by the consumer. The proliferation of bacteria can be suppressed and the bean curd can be maintained in a fresh state.
