Abstract:
To obtain a pancake not hardening even by cooking by a microwave oven after refrigeration or freezing and controlling hardening with the lapse of time.
This pancake is produced by adding urea to wheat flour so that 0.002-0.5 wt.% based on wheat flour of urea is contained in a final product.
