Abstract:

To provide papaya fermented food increased in maltose and maltotriose by mixing with human salivary, compared to mixing with water, and having new bioactivation.

The papaya fermented food is increased in maltose and maltotriose by mixing with human salivary, compared to mixing with water. The papaya fermented food has an effect of suppressing an increase in the blood glucose level of Type 2 diabetic. Furthermore, the papaya fermented food has an effect of promoting the recovery of the injury of Type 2 diabetic.
