To provide a parsley fermented product excellent in taste and bioactivity, and to provide food and drink, medicine and a perfume composition including the fermented product.
The food and drink, medicine and perfume composition each include as the active ingredient, the fermented product which is obtained by subjecting parsley leaves, stems and seeds to microbial transformation, using filamentous fungi of Aspergillus oryzae.
