Abstract:
PURPOSE:To obtain pasta filler cheese containing food ingredients in a uniformly dispersed state and in high ratio, by blending cheese curd or unaged cheese as a raw material with various food ingredients in a dry heat state before a kneading process under pressure in hot water. CONSTITUTION:Pasta filler cheese is uniformly blended with food ingredients in >= about 90% high yield and prepared in the following way. Namely, cheese curd or unaged cheese at pH 5.0-5.8 is kneaded under pressure in hot water to form curd having excellent plasticity. Then the curd is separated from the hot water, formed or extruded to produce pasta filler cheese. In the method, the cheese curd or unaged cheese is blended with food ingredients in a dry heat state before kneading process under pressure in hot water. The cheese curd or unaged cheese blended with the food ingredients is preferably heated at 45-75 deg.C.
