To obtain a natural material processed food of health intention, which does not use sugar at all, does not require boiling down by heating, demands three elements of ≥0.5% pectin, ≥60% sugar content and pH of ≥3.0 in main materials for making the paste-like processed food and is produced through a simple production process.
The paste-like processed food comprises dry fruit sarcocarp and vinegar. Dried persimmon is especially preferable as the dry fruit and persimmon vinegar containing white cedar essential oil is most suitable as the vinegar. The method for producing the paste-like processed food comprises immersing dry fruit sarcocarp in vinegar, sufficiently permeating vinegar into the sarcocarp, taking out and loosening only the sarcocarp and making the material into a paste-like state.
