To provide pasty pickled ume as a food having pickled ume taste which has fine granular palate feeling while making the best use of taste of pickled ume, serves as an easily-adjustable seasoning or auxiliary food material, has fluidity appropriate to handle, and therefore, is capable of being homogeneously mixed with other food materials.
The pasty pickled ume comprises a particle group obtained by subjecting ume fruits to hardening treatment with a calcium salt, being pickled with salt to prepare hard pickled ume, subjecting the pickled ume to seed removal, and cutting the product into tiny pieces by a rotary blade while mixing it with seasoning liquid so as to adjust the particle diameter of ≥80% particles of the particle group to a 1-2 mm range. The food enables chewing and tasting many particles at the same time, providing for instance, crispy feeling like loosened cod roe and unconventional new palate feeling of pickled ume.
