PURPOSE: To peel a skin while keeping constant thickness and to prevent fingers from being injured by providing a pair of crimping plates equipped with a V-shaped blade receiving groove on a supporting plate and forming a groove for passing an object to be cut among a kitchen knife, supporting plate and crimping plates when the kitchen knife is fitted to the blade receiving groove.

CONSTITUTION: Two crimping plates 3 are fitted on one side face of a supporting plate 1 at a fixed interval, and a V-shaped blade receiving groove 2 is formed at the lower parts of the crimping plates 3. Then, a kitchen knife 5 is mounted by inserting its blade 6 to this blade receiving groove 2. Besides, the crimping plate 3 on the top end side of the kitchen knife 5 between two crimping plates 3 is provided with an auxiliary plate 4. When the knife 5 is mounted by inserting the blade 6 to the blade receiving groove 2 through the crimping plates 3, the crimping plates 3 form a passing groove 7 between the kitchen knife 5 and the supporting plate 1. At the time of usage, an object is peeled by the blade 6 of the kitchen knife 5 between the crimping plates 3 and 3 while exposing the kitchen knife 5 on the opposite side of the supporting plate 1.
