Abstract:

To obtain a peptide having an anti-mutation property capable of suppressing the action of a mutagen having a close relationship to cancer by hydrolyzing a body tissue component of an animal with an enzyme.

This peptide having an anti-mutation property is obtained by hydrolyzing a body tissue component such as blood, a meat (except for human), a tissue containing collagen (except for human) and an internal organ (except for human) of an animal with an enzyme such as a protease such as an alkalase, an orientase, an actinase, a neutrase, etc. The peptide is contained in foods and beverages such as a cake, a bread, a processed cooked cereal, a milk product, a an oil and fat processed product, a refreshing beverage, a powdered beverage, a seasoning material and a fish flour food.
