To provide a perfume substance comprising a derivative of a substance Zerumbone extracted and purified from Zingiber zerumbet Smith.
This substance is at least a kind of perfume substance selected from compounds A, a compound obtained by hydrogenating an unsaturated bond of a purified extract of the Zingiber zerumbet Smith, B, a compound including a hydroxyl group obtained by reducing a carbonyl group of the compound A, C an esterification product compound of the hydroxyl group of the compound B and compounds obtained by isomerization of these compound at normal temperature. Among these compounds the compounds expressed by chemical formulas III and IV are preferred. Some new compounds having perferable perfume are synthesized via a new synthetic path. These compounds having perfume of a fresh wood and fruits are usable as perfume materials.
