Abstract:

To provide a pH adjusting agent having pH buffer ability equal or superior to that of an inorganic phosphate in the neutral to acid region, not affecting taste/flavor, and little in causing the adverse effect of calcium absorption inhibition.

The pH adjusting agent contains at least one phosphorylated saccharide selected from phosphorylated starch, phosphorylated dextrin, phosphorylated reduced dextrin, phosphorylated reduced oligosaccharide, phosphorylated monosaccharide and their salts, and/or salts thereof, or contains at least one phosphorylated saccharide selected from phosphorylated dextrin and phosphorylated oligosaccharide both obtained by making phosphorylated starch that is obtained by the phosphorylation of starch into a smaller molecule and their salts, and/or salts thereof. There are provided foods, drinks, seasonings, taste improvers, oral hygienic agents, detergents, bathing agents, cosmetics, pharmaceuticals, mineral supplements, mineral absorption enhancers, pastes, admixtures, paints, pigments, feedstuff and fertilizers using the pH adjusting agent. A manufacturing method of coffee drinks is provided, in which heat sterilization treatment is conducted after the above pH adjusting agent is added and the pH is adjusted. The coffee drinks containing the pH adjusting agent are also provided.
