Abstract:

To provide a photosterilization method for fungi on the surface of a food such as cut rice cake, bread, raw ham or beef jerky, having practically sufficient sterilization effect without affecting the quality of the food such as emission of bad odor due to ultraviolet irradiation.

This photosterilization method for fungi on the surface of a food such as cut rice cake comprises intermittently irradiating several times the surface of a food with pulsed radiation containing no ultraviolet rays <300 nm in wavelength; wherein the above pulsed radiation to be used is such as to be transmitted through a film, glass plate or filter capable of absorbing ultraviolet rays <300 nm in wavelength; alternatively, this method may comprise the following: a target food is packaged with a film capable of absorbing ultraviolet rays <300 nm in wavelength into a food package, which is then irradiated with the above-mentioned pulsed radiation in a similar way.
