PURPOSE: A pickle having an avocado taste and a nutritive value, improved touch to the teeth, agreeable to the taste of Japanese obtained by preserving a food raw material such as vegetable, fish and shellfish, animal meat, etc., with a base consisting essentially of avocado paste.
CONSTITUTION: A food raw material, e.g., vegetable such as Japanese radish, Chinese cabbage, etc., fish and shellfish such as cod roe, herring roe, sea bream, cod, etc., animal meat, beef, pork, fowl meat, etc. is arranged on a layer a base obtained by blending avocado paste prepared from ground avocado flesh optionally with seasoning such as vinegar, fruit juice, sugar, salt, MISO (fermented soybean paste, soy sauce, sodium glutamate, etc., liquors such as wine, SAKE, etc., a layer of the base is piled on the food raw material and they are alternately piled to give a pickle.
