Abstract:
To provide a tea-based beverage in which the pungent taste derived from piperine when Piper longum is blended in the tea-based beverage is suppressed.SOLUTION: In a tea-based beverage containing piperine, by setting (A) the content ratio of piperine to tea polyphenol as 0.002 to 0.015, and (B) the content ratio of caffeine to tea polyphenol as 0.1 or less, the pungent taste peculiar to piperine can be suppressed even while containing an effective amount of piperine showing physiological functional activity. Piper longum is preferable as the source of the material containing piperine.SELECTED DRAWING: None
