Abstract:
To provide a production method of a plant-based food product, the plant-based food product, and a use related to the same.SOLUTION: A method includes the steps of: providing a suspension including starch and, if desired, protein; heating the suspension to obtain a warmed suspension; preparing a suspension including partially hydrolyzed starch by processing the warmed suspension with at least one type of starch degrading enzymes; subjecting the suspension including the partially hydrolyzed starch to thermal processing to obtain a heat-processed suspension including the partially hydrolyzed starch; cooling the heat-processed suspension; and further, if desired, fermenting and/or acidifying the suspension including the partially hydrolyzed starch; and still further, if desired, cooling the suspension and/or adding jam, beta-glucan, a flavoring, and/or an additive to the suspension, and obtaining a plant-based food product.SELECTED DRAWING: Figure 1
