Abstract:
To provide a plant composition that has high protein content, suppressed increase in viscosity, and suppressed bitterness, and to provide a method for producing plant composition.SOLUTION: A plant composition according to the present invention has a protein content of 10.0 w/w% or more and a viscosity at 25°C of 7800 mPa-s or less, and is a metalloendopeptidase-treated product obtained using at least one of grain and nut/seed as raw material. The method for producing plant composition according to the present invention includes a step of reacting metalloendopeptidase on at least one of raw material grain solution and nut/seed solution, and a step of increasing the protein concentration of at least one of raw material grain solution and nut/seed solution.SELECTED DRAWING: None
