Abstract:
To provide a method for efficiently extracting an extract including shogaol and paradol with high functionality from a raw material by an aqueous solvent, since, the shogaol and paradol are hardly dissolved in water, so that as the extract including the shogaol and paradol, an extract extracted from a raw material by an organic solvent has been used, however, for use for food products which a consumer directly eats and drinks, an extract extracted by an aqueous solvent has been desired, however, in extraction using the aqueous solvent, extraction efficiency is low so that a method for extracting shogaol and paradol efficiently by the aqueous solvent, has been desired, and to provide the extract.SOLUTION: Inventers of the present invention have found that, a plant raw material including shogaol and paradol is extracted under presence of at least one of an emulsifier and hydrolytic enzyme in an aqueous solvent, thereby the shogaol and paradol can be efficiently extracted.SELECTED DRAWING: None
