Abstract:
To obtain a plastic water-in-oil type emulsified product capable of keeping stable emulsified state even without using a synthetic emulsifier, and also excellent in flavor.
This emulsified product is obtained by including oil and fat, water and enzymegenation yolk produced by treating yolk with phospholipase A and/or protease.
