Abstract:
To provide a poly--glutamic acid having a super-high molecular weight produced by a halotolerant strain, Bacillus subtills var. chungk, and food products, cosmetics, animal feeds and mineral absorption-promoting composition each including the glutamic acid.
This is a super-high molecular weight poly--glutamic acid (PGA) having a molecular weight of more than 5,000 kDa which is produced by a halotolerant strain, in which more than 95% of the molecules have a molecular weight in the range of 3,000 to 15,000 kDa, and can be produced through the culture of Bacillus subtills var. chungk. The PGA shows excellent hygroscopicity, moisture retaining property, sustained release property, mineral-solubility and water absorptivity.
