To provide a polymer-based casing for sausages suitable for use with uncooked meats.
A polymer resin is blended with a silicon-based barrier control agent to increase the permeability of the sausage casing. The obtained blend can be biaxially drawn to produce a single layered polymer-based sausage casing suitable for use with uncooked sausage meats. A method for improving peelability of cooked sausage casings by injecting a thin coating of a mold release agent without adding a surfactant to the sausage casings during a shearing process is also disclosed. The mold release agent is a hydroxypropylmethylcellulose solution by using which a low viscosity mold release agent effectively improving releasability of arbitrary kind of sausage casings is prepared, and it is preferable to use the mold release agent for the polymer-base sausage casings of the present invention.
