Abstract:
To provide a portable meal substitute in which texture is kept even when stored for a long period.
This portable meal substitute is obtained by baking dough using 5-50 wt.% mix powder in which an oil and fat alfatized starch obtained by heating starch slurry in the presence of the oil and fat and having ≤50% degree of separation of oil and fat and ≤5% degree of adhesion is formulated together with 5-30 wt.% saccharides.
