Abstract:
To provide a powder composition for beverage consisting of a powdered separated soybean protein and anthocyanin, exhibiting a color tone of reddish violet of the anthocyanin-based fresh color on dissolving or suspending it in water, milk, a sports beverage, etc., for beverage, also keeping the anthocyanin stably and maintaining various functions of the anthocyanin.
This edible and drinkable powdered composition is obtained by incorporating the powdered separated soybean protein, a powdered material containing the anthocyanin and an organic acid.
