Abstract:

PURPOSE: To obtain powder for a fried food without coat, comprising a specific hydrolyzate of dextrose starch, capable of providing the soft fried food without coat good in palatability simply by smearing a food therewith and frying the resultant food in an oil, usable for meats, fishes and shellfishes, vegetables, etc., and producing a small amount of frying refuse.
CONSTITUTION: Wheat flour is blended with potato starch, common salt, a seasoning, a spice, etc., and a starch hydrolyzate having 5-50 dextrose equivalent is then added and mixed therewith. Furthermore, a thickening agent, a gelling agent, a synthetic paste, a protease, a powdery SAKE (Japanese rice wine), an emulsifying agent, etc., as necessary, are added to afford the objective powder for a fried food without coat, effectively utilizable for various ingredient materials such as meats, fishes and vegetables, capable of providing the soft fried food without the coat good in palatability and taste simply by smearing the ingredient material therewith and frying the prepared ingredient material in an oil, improving the appearance of the fried food without the coat due to good sticking thereof to the ingredient materials and producing a small amount of frying refuse remaining in the frying oil and good in yield in producing the fried food without the coat.
