Abstract:
PROBLEM TO BE SOLVED: To provide a powder oil and fat composition for manufacturing bread having volume, softness and elasticity, and fluffy and moist texture.SOLUTION: There is provided a powder oil and fat composition for bread containing a powdered oil and fat composition satisfying following (a) condition. (a) It is an oil and fat composition containing 65 to 99 mass% of XXX type triglyceride having an aliphatic acid residue X having x carbon atoms on 1 position to 3 position and 35 to 1 mass% of one or more kind of X2Y type triglyceride where one aliphatic acid residue X of the XXX type triglyceride is substituted by an aliphatic acid residue Y having y carbon atoms based on 100 mass% of the total triglyceride content, where the carbon number x is an integer selected from 8 to 20 and the carbon number y is an integer selected from x+2 to x+12 and y≤22.SELECTED DRAWING: None
