Abstract:
Provided is a powdery food preservative composition comprising an ascorbic acid compound, an acetate and pullulan, wherein the weight loss on drying (Xa) of the composition after the composition is dried for 12 hours at 45 DEG C and a relative humidity of 20% RH is -0.1 to 0.1%, the weight loss on drying (Xb) of the composition after the composition is dried for 4 hours at a temperature of 120 DEG C is 0.05 to 0.5%, and the color difference ([Delta]YI) between the yellowness (YIa) determined after the composition is stored in a 50 mL sealed glass container with a lid at a temperature of 45 DEG C for 2 weeks and the yellowness (YIb) determined after the composition is stored at a temperature of 0 DEG C for 2 weeks is less than 14.
