PROBLEM TO BE SOLVED: To provide a powder sugar filling capable of preventing falling of the powder sugar filling from a dough in an entrainment process of noodle stripe dough and a division process, and capable of preventing elution of the powder sugar filling from divided dough in a fermentation process.SOLUTION: There is provided a powder sugar filling containing powder sugar and the above described problem is solved by using the powder sugar filling containing 4 to 23 mass% of pregelatinized starch and/or pregelatinized wheat.SELECTED DRAWING: None
