PURPOSE: To eliminate chemical change during preservation and to alleviate an irritating smell of vinegar by gluconic acid formed in dissolving glucono delta lactone in water, by preparing powder vinegar blended composition obtained by adding glucono delta lactone to powder vinegar.
CONSTITUTION: Powder vinegar comprising acetic acid such as rice vinegar, vinegar lees, SAKE (rice wine) vinegar, malt vinegar, wine vinegar, apple vinegar, synthetic vinegar, as a main component is mixed glucono delta lactone to give a powder vinegar blended composition. Glucono delta lactone is glunonic acid lactone and glucono delta lactone is ordinarily used. The content of glucono delta lactone is generally 0.5W2.0pts.wt., preferably about 1.0W1.5pt.wt. based on 1pt.wt. acetic acid contained in the vinegar. The prepared powder vinegar blended composition can extremely alleviate irritating smell and stimulating acidity of vinegar when the composition is dissolved in water.
