Abstract:
PROBLEM TO BE SOLVED: To provide a powdered fat having good fluidity, excellent dispensability into water, excellent oxidative stability, and excellent sustainability of flavor, and to provide a method for producing the same.
SOLUTION: This method for producing the powdered fat includes a process for mixing a fatty acid ester and a highly-branched cyclic dextrin with water so as to form a liquid composition for the powdered fat and the other process for drying the liquid composition. The powdered fat containing the fatty acid ester and the highly-branched cyclic dextrin, the composition for the powdered fat containing the same, and food and drink containing the powdered fat are provided in the specification, respectively.
