Abstract:
PURPOSE: To provide a powdered oil or fat which is highly safe as food, has an antioxidant power, and is easy to handle without detriment to the flavor inherent in the oil or fat and to provide a method for producing the same.
CONSTITUTION: The objective compsn. comprises 5-60wt.% oil or fat, 20-95wt.% dextrin, 0.5-20wt.% at least one saccharide selected from the group consisting of a fruit sugar, an isomerized sugar, an invert sugar, and honey, 0.1-5wt.% ethyl alcohol, and 0.1-15wt.% water and is produced by mixing under stirring a compsn. contg. an oil or fat and dextrin with an aq. ethyl alcohol soln. contg. at least one saccharide at least contg. a fruit sugar at normal temp. or under heating.
