Abstract:
To provide powdery oil and fat that prevent aggregate formation under all conditions including a high salinity condition, a low pH condition, and a heating condition, can render an object cloudy, and exhibits excellent emulsion stability over time, and a method for producing the same.SOLUTION: The present invention provides powdery oil and fat that contain heat-denatured whey protein and polyglycerin fatty acid esters with a polymerization level of 10 or more. The present invention also provides a method for producing powdery oil and fat that includes spraying and drying an emulsion containing heat-denatured whey protein and polyglycerin fatty acid esters with a polymerization level of 10 or more.SELECTED DRAWING: None
