PURPOSE: To produce a powdery mix having rich taste and flavor of yogurt and excellent palatability and useful for ice cake, lacto-ice, ice milk, ice cream, frozen yogurt, etc., by mixing a sugar with powdery yogurt, a solid milk component, a pH modifier and an emulsifier.
CONSTITUTION: This powdery mix is produced by mixing a sugar (e.g. sucrose or glucose), a powdery yogurt, a milk solid component, a pH modifier (preferably sodium citrate, potassium citrate, sodium succinate, sodium ascorbate, sodium tartrate, sodium malate, sodium acetate, sodium carbonate and/or potassium phosphate, sodium phosphate, potassium metaphosphate, sodium metaphosphate, potassium polyphosphate, sodium polyphosphate, potassium pyrophosphate or sodium pyrophosphate) and an emulsifier.
