PURPOSE: To obtain a powdery oil and fat for soup giving large amount of floating oil and fat when dissolved in hot water and having excellent palatability by adsorbing an edible liquid oil and fat to porous starch and mixing a proper amount of the obtained powder to a hardened oil and fat which takes powdery state at normal temperature.
CONSTITUTION: An edible liquid oil and fat such as rapeseed oil is slowly added and absorbed to a porous starch in an amount of 70-120wt.% to obtain a powder. An edible hardened oil and fat such as lard pulverized by spraying with cold air stream is mixed to the powder in an amount of 30-70wt.% based on the whole composition. The prepared powdery oil and fat for soup is useful as a component of instant Chinese noodle, instant soup, etc. The oil and fat floats on the soup by pouring hot water on the powder and the prepared soup is clear and has excellent palatability.
