Abstract:
PROBLEM TO BE SOLVED: To provide a new pregelatinized form of chemically modified resistant starch.SOLUTION: A pregelatinized form of chemically modified resistant starch is provided, which has a high degree of resistance to α-amylase digestion, a fat-like texture and outstanding freeze-thaw stability. A starch product is formed as a distarch phosphodiester that undergoes melting of a crystalline phase by heating above its gelatinization temperature. The product maintains a granular morphology that produces a smooth texture. The pregelatinized resistant starch may be used in various food products, where it lends high dietary fiber, low fat and/or low calorie characteristics to the product.
