Abstract:

PURPOSE: To provide a new process for the preparation of boiled food from a relatively large-sized river fish such as carp and trout.

CONSTITUTION: A fish is gutted to obtain a dressed fish body. The body is applied with a scorch pattern, dried in the sun, wrapped with a tangle sheet together with a wood shaving, put into a pot containing water and liquor to dip the body, pressed with a loose lid and a weight, boiled for about 3hr while replenishing water, added with sugar, boiled for about 1hr, added with soy sauce and MIRIN (sweet Japanese rice wine to be used as seasoning) and boiled down for about 2hrs.
