Abstract:

PURPOSE: To obtain a brown-colored pigment for custard pudding, resistant to the flow of the colored part for a long period, by mixing a water-soluble brown pigment homogeneously with an oleophilic surfactant and a hydrophilic surfactant.

CONSTITUTION: 1pt.wt. of a water-soluble brown pigment such as caramel, cacao pigment, etc. is mixed homogeneously with 0.5W2pts.wt. of an oleophilic surfactant having an HLB of 1W7, e.g. glycerol fatty acid ester, sorbitan fatty acid ester, etc., and the obtained mixture is further mixed homogeneously with about 1W4pts.wt., based on 1pt.wt. of the mixture, of a hydrophilic surfactant having an HLB of ≥10, e.g. sorbitan fatty acid ester, sucrose fatty acid ester, etc.
