PURPOSE: To prepare the subject cake capable of being distributed without a sterilization process and of being readily opened, free from a dry texture and having a good flavor by filling a cake dough in a container, baking the dough and pouring an aqueous solution containing alcohol and a sugar in specific ratio on the cake.
CONSTITUTION: A cake dough is filled in a heat-resistant container and subsequently baked. An aqueous solution containing alcohol and a sugar in such amounts as to give an alcohol concentration of 1.2-2.3wt.% and a water activity of ≤0.83, e.g. an aqueous solution containing 10.0-31.5wt.% of the alcohol, 75.0-21.3wt.% of a sugar alcohol and 15.0-47.2wt.% of water, is poured on the baked cake. The container is subsequently sealed to provide the objective cake.
